Easy 7-Hour Leg of Lamb: The Foolproof Easter Recipe
Easy 7-hour leg of lamb: the Easter dish that looks spectacular and requires almost no skill. 20 minutes of actual work, then 7 hours of patience while the oven transforms tough collagen into silky gelatin. The result: meat so tender it falls apart with two fingers, an amber cooking juice that is a sauce by itself.
Prep: 20 min | Cook: 7h at 150°C | Difficulty: Very easy | Serves: 6 | Perfect for Easter
Ingredients
- 1 leg of lamb, 1.8-2 kg (bone-in — the bone releases the collagen that gives the sauce its body)
- 8 garlic cloves (6 for larding, 2 for the base)
- 3 sprigs fresh rosemary, 4 sprigs fresh thyme, 2 bay leaves
- 150ml dry white wine or lamb stock
- 2 carrots, 2 onions
- 3 tbsp olive oil
- 1 tbsp wholegrain mustard (optional glaze)
- Sea salt, freshly ground pepper
Step-by-Step Recipe
- Take lamb from fridge 1 hour before. Preheat oven to 150°C. Peel 6 garlic cloves and halve lengthways. Cut deep slits across the lamb and push a garlic half into each. These garlic pockets melt over 7 hours and perfume the meat from inside.
- Sear (5 min): In a large cast-iron casserole, heat olive oil over high heat. Sear the leg 2-3 min each side until golden. This Maillard reaction creates the roasted aromas that 7 hours of gentle cooking alone cannot.
- Build the pot: Remove lamb. Fry onions and carrots 3 min. Deglaze with wine. Return lamb, add herbs and remaining crushed garlic. Seal lid tightly — if not airtight, seal with a flour-and-water paste dough band.
- 7 hours at 150°C — do not open the lid for the first 5 hours.
- Check: The bone should pull free with two fingers. For a browned top: remove lid, grill at 220°C for 10 min.
- The sauce: Skim the cooking juices and reduce 5 minutes. Never discard this.
The Science of 7 Hours
Lamb is rich in collagen. At 150°C, collagen takes 6-7 hours to fully dissolve into gelatin. The meat falls apart in silky fibres and the sauce becomes naturally thick — no starch, no thickener needed.
Pro Tips
- Anchovy in larding holes: in Provence, a half anchovy filet beside each garlic — it melts completely but adds invisible umami depth everyone notices
- Make it the day before: refrigerate in its juice, reheat 1 hour at 120°C — even better
- Serve with flageolet beans cooked in the cooking juices
