Tiramisu with chestnut cream

Preparation :
Separate the egg whites and yolks, mix the yolks with the sugar, add the chestnut purée, mascarpone and rum and mix again until smooth.
Beat the egg whites until stiff with a pinch of salt and fold gently into the mixture.
Dip the biscuits in the coffee.
Divide half the biscuits between the bases of the glasses or ramekins.
Cover the biscuits with a first layer of mascarpone cream, 2.5 cm high. Repeat the operation
Pour the rest of the cream on top and finish the tiramisu with a final layer of cocoa powder, or a pinch of homemade granola if you like it crunchy.
Keep your ramekins in the fridge for at least 7 hours.
