Salade végétarienne de semoule, pois chiches, tomates confites et épinards à la coriandre

Ingrédients
400 g de pois chiches Albert Ménès
60 g de pignons de pin Albert Ménès
1 pot de tomates séchées à l'huile d'olive Albert Ménès
1 c. à soupe de poivrons déshydratés Albert Ménès
300 g de boulgour
200 g de pousses d'épinards
1 petit bouquet de coriandre fraiche
3 c. à soupe de jus de citron
Sel et poivre

Préparation
Faire cuire le boulgour dans un grand volume d'eau bouillante salée, selon les indications du paquet. Égoutter et laisser refroidir celui-ci. Égoutter et rincer les pois chiches au naturel Albert Ménès. Égoutter les tomates séchées en conservant l'huile du bocal. Laver, sécher et effeuiller la coriandre fraiche. Laver et essorer les épinards.
Faire griller les pignons de pin à sec dans une petite poêle. Dans un bol, mélanger 4 cuillères à soupe d'huile de tomates séchées avec le jus de citron, les poivrons, saler et poivrer.
Sur les assiettes de service, répartir les tomates séchées, les pousses d'épinards, les pois chiches, la semoule, les pignons et la coriandre. Arroser de vinaigretteet servir sans attendre.
