CHICKPEA PATTIES WITH SMOKED PAPRIKA

Ingredients
2 c. à café de graines de cumin Albert Ménès
1 tbsp of Albert Ménès smoked paprika
500g of dry chickpeas or 1 jar of Albert Ménès chickpeas
4 cloves of garlic
1 large bunch of fresh coriander
1 shallot
A few spinach shoots
1 c. à café de bicarbonate de soude
Salt and Pepper
Grapeseed oil, preferably, for cooking
That little extra: Albert Ménès gourmet ketchup with espelette pepper
Preparation
Soak the chickpeas in a large volume of water at room temperature for 24 hours, then drain and lay them on a clean cloth to dry (if they are not properly dried, the mixture will contain too much water and the patties will not hold together during cooking). For those in a hurry, you could replace the dry chickpeas with a jar of Albert Ménès natural chickpeas.
Then put the chickpeas in the bowl of a food processor, blend, and add all the other ingredients to season, except the oil. Blend again quickly until you get a paste - no need to go to a smooth purée, there should be some solid pieces left.
Let stand for 10 minutes then taste and adjust the seasoning. Heat a pan with 5 mm of oil. Cut the dough into equal portions the size of a steak and place directly into the hot pan. Finally, crush with the flat of the cooking spatula to obtain thick patties, and turn to colour both sides. Serve hot.
@coupsdefood's tip: served with a sheep's milk yoghurt sauce mixed with a little lime juice, fresh mint, smoked paprika and a drizzle of fruity olive oil, it will be divine! You could also add gourmet ketchup to your galettes with Espelette pepper for even more flavour.
