Focaccia with Cherry Tomato and Herbs
Fancy a simple, friendly and trendy aperitif? We've got just the thing for you: Focaccia! This Italian dish smells of Dolce Vita and Mediterranean flavours.
For 1 focaccia

Ingredients:
- 250 g flour
- 1 sachet dried baker's yeast
- 15 cl warm water
- 200 g cherry tomatoes
- Fresh basil
- 1 tbsp. thyme
- 1 tbsp. rosemary
- Flower of salt
- Black pepper
- Olive oil
Preparation :
First, mix the flour, dried baker's yeast and a pinch of salt flower in a bowl. Gradually add the warm water and mix gently. Finally, add the olive oil and knead by hand until the dough is smooth.
On a floured work surface, work the dough by hand. It should be very elastic and no longer stick to your fingers. Add a little flour if necessary. Place the dough in a large floured bowl, cover with a tea towel and leave to rise for 45 minutes in a warm place, before doubling in size.
Preheat the oven to 200°C. Wash and halve the cherry tomatoes. On an ovenproof baking tray, roll out the dough by hand. Make small holes with your fingers. Take care not to crush the pastry too much. Place the ½ tomatoes in the holes. Brush the focaccia with a little olive oil, sprinkle with thyme and rosemary and season with pepper.
Place in the oven for around 20 to 25 minutes.
Add a few fresh basil leaves before serving and enjoy warm.
Chef's tip :
Focaccia is a bread that can be adapted to suit all tastes. You can choose your toppings by adding olives, preserved tomatoes when fresh tomatoes are no longer in season, or potatoes and bacon for a more wintry version.
