Easy & Quick Yoghurt Cake: The Foolproof Grandmother Recipe
The easy yoghurt cake: this is the first recipe every French child learns to bake. No scales, no complex technique, no specialist equipment. The empty yoghurt pot becomes a universal measure — and in 40 minutes you have a perfectly moist cake that fills the whole kitchen with vanilla and butter.
Prep: 10 min | Cook: 30-35 min | Difficulty: Ultra-easy | Serves: 6-8
Ingredients (the yoghurt pot = your measure)
- 1 pot natural full-fat yoghurt (keep the empty pot!)
- 3 pots plain flour
- 2 pots caster sugar
- ½ pot neutral oil
- 3 eggs
- 1 sachet baking powder (11g)
- 1 tsp vanilla extract
- Zest of ½ lemon (the genius touch)
- Pinch of salt
Step-by-Step Easy Recipe
- Preheat oven to 180°C. Butter and flour a 24cm cake tin.
- Wet ingredients first: In a large bowl, whisk together the yoghurt, eggs, sugar and oil until the mixture lightens slightly.
- Add dry ingredients: Fold in flour, baking powder, vanilla, lemon zest and salt with a spatula — just until combined. Do not over-mix: overdeveloping the gluten makes the cake tough.
- Bake immediately (30-35 min): Pour into tin and bake at once — baking powder starts working as soon as it gets wet. Test with a skewer: it should come out clean.
Why This Cake Is Truly Foolproof
The yoghurt plays three roles simultaneously: moisture, acidity (which activates the baking powder) and dairy proteins (which provide structure). The 3:2:½ ratio (flour:sugar:oil) is a mathematically perfect equation that tolerates ±20% measurement errors. It's what pastry chefs call a robust recipe.
