Easy Apple & Cinnamon Crumble: The Foolproof Grandmother Recipe
Easy apple and cinnamon crumble: the British dessert that has conquered France combines the best of both worlds — no pastry rolling, no complex technique, just fingertips, a bowl and 15 minutes of work. Yet a crumble done right is extraordinary: shatteringly crispy topping, molten fragrant fruit underneath. This guide gives you the technique and the secrets that make the difference.

Ingredients
Apples:
- 800g apples (2 varieties — see below)
- 30g light brown sugar
- 1 heaped tsp ground cinnamon
- ½ tsp grated nutmeg
- Juice of ½ lemon
Crumble topping:
- 120g plain flour
- 80g cold butter, diced (temperature is critical)
- 80g demerara sugar
- 40g rolled oats (the secret for real texture)
- 1 pinch salt, ½ tsp cinnamon
Step-by-Step Recipe
- Preheat to 180°C.
- Prepare apples (5 min): Peel and cut into 2cm chunks. Toss with brown sugar, cinnamon, nutmeg and lemon juice in a large bowl. Pour into a buttered baking dish.
- Make the crumble (8 min): In the same bowl, combine flour, demerara, oats, cinnamon and salt. Add cold diced butter and rub with fingertips until you get irregular crumbs — some fine, some pea-sized. This irregularity creates the contrast of crispy and sandy textures.
- Top and bake (30-35 min): Scatter crumble over apples without pressing down — the air between crumbs creates the crunch. Bake until deep golden and apples are bubbling around the edges.
- Rest 10 min before serving. Serve warm with vanilla ice cream, double cream or crème anglaise.
Why Cold Butter Makes the Difference
Cold butter rubbed into flour leaves distinct fat pieces coated in flour. In the oven, water in the butter evaporates as tiny steam bubbles — this is what creates the crunch. Soft or melted butter penetrates uniformly and gives a sandy, cakey texture instead.
The Frozen Crumble Hack
Make a double batch of crumble topping and freeze half in a zip bag. Straight from the freezer onto fruit and into the oven — a homemade dessert in 35 minutes with zero planning.
