Spicy eggplant
For 4 people
Preparation time : 15 min
Cooking time : 40 min
Ingredients :
- 2 aubergines
- 1 clove of garlic
- 1 tbsp. Albert Ménès yellow curry powder
- 1 tsp. Albert Ménès cumin
- 1/2 tsp. Albert Ménès turmeric
- 1/2 tsp. Albert Ménès smoked paprika
- 6 tbsp. olive oil
- 100 g feta cheese
- Seeds from half a pomegranate
- A few basil and parsley leaves
- Albert Ménès Salt/Penja Pepper
Preparation :
Preheat the oven to 180°C.
Peel and chop the garlic and mix with the spices and olive oil.
Clean and halve the aubergines lengthways.
Using a knife, make criss-crosses in the flesh. Brush the aubergines with the spiced oil and place in the oven for 20 mins.
Crumble the feta cheese over the aubergines and cook for a further 20 mins.
Collect the pomegranate seeds and sprinkle over the aubergines with the chopped herbs, salt and pepper just before serving.
