Chicken and dried fruit salad with honey and chive vinaigrette

Preparation time : 25 min
Ingredients :
- 125 g Albert Ménès mixed dried fruit
- 1 tbsp. Albert Ménès acacia honey
- 4 tbsp. olive oil
- 1 tbsp sherry vinegar
- 1 tbsp. Albert Ménès chives
- 1 roast chicken
- 150 g rocket leaves
- salt and pepper
Preparation :
Rinse and spin dry the rocket leaves. Cut the roast chicken into large chunks. Place on a serving dish and add the Albert Ménès dried fruit mixture.
Chef's tip: crush the dried fruit mixture to increase the flavour tenfold!
In a bowl, combine the Acacia honey, sherry vinegar and olive oil and season with salt and pepper. Pour the vinaigrette over the mixed salad and toss to combine. Add a pinch of chives for decoration.
