Cod in a spice crust
A recipe that always makes an impression: cooking fish can be scary, but in the end it's simple, tasty and chic. Cod is full of goodness, it's healthy and delicious. You'll see, even the kids want more!

Ingredients:
- 400g of cod
- Juice of one lemon
- 50g flour
- 15g butter
- Flat parsley
- olive oil
- 1 clove garlic
- 2 teaspoons coriander seeds
- 2 teaspoons cumin seeds
- 2 teaspoons oak-smoked paprika
- Salt
Preparation :
First melt the butter, squeeze the lemon and crush the whole spices. In a bowl, mix 2 tablespoons of lemon juice, 2 tablespoons of olive oil and 2 tablespoons of melted butter. In another bowl, mix the flour, spices and salt. Wash and remove the leaves from the parsley. Peel and chop the fresh garlic.
Dip the cod fillet in the lemon mixture and then in the flour-spice mixture. Shake to remove any excess.
Heat the olive oil in a frying pan over a high heat; it should be hot but not smoking. Lower the heat to medium and place the fish fillet in the pan. Sear gently for 2 to 3 minutes on each side, without handling the fish so as not to damage the flesh. The crust should take on a nice brown colour. Once cooked, place the fish on a serving plate.
Add the minced garlic to the rest of the lemon mixture, stir and pour into the pan in which you are cooking the cod. Leave to cook for around 1 minute, then drizzle over the fish fillet. Finally, sprinkle with fresh parsley and serve immediately.
Chef's tip :
Adapt the recipe with seasonal white fish such as sea bass.
