Preparation
Peel and finely chop the two shallots, then chop the fresh chives. In a bowl, combine the drained albacore white tuna, fromage frais and Albert Ménès curry paste.
Add the chives and shallots. Season with salt and pepper and set aside in the fridge.
enKgourmand's tip: serve these tuna rillettes with curry on Albert Ménès' fine Oboles de Lucerne for a graphic effect.
