Chicken Colombo
Head for the West Indies with a traditional dish: chicken colombo! A simple, gourmet recipe that will surprise your guests by introducing them to new flavours.
For 6 people

Cooking time : 15min
Ingredients
- 1 kg chicken breast
- 1 cup of water
- 2 onions
- 4 medium-sized potatoes
- 2 courgettes
- 2 carrots
- 1 aubergine
- 2 cloves of garlic
- ½ lemon
- 1 tablespoon Albert Ménès colombo
- 1 teaspoon Albert Ménès allspice
- Salt
- Pepper
Preparation
Peel and finely chop the onions. Crush the garlic cloves.
Cut the chicken breasts into large pieces.
Squeeze the juice from the lemon.
In a bowl, mix the onion, garlic, lemon juice, half a cup of water, a tablespoon of colombo and the allspice.
Season to taste with salt and pepper and pour over the chicken breasts.
Leave the meat to marinate for at least 4 hours.
In a large saucepan, cook the chicken thighs on all sides, gradually adding the rest of the marinade.
Peel and chop the vegetables into large chunks and add them to the mixture. Add two tablespoons of Colombo and half a cup of water.
Simmer the chicken and vegetables for at least 15 minutes, covered.
Serve the chicken colombo immediately with rice.
