Amuse bouche d'Oboles au Cumin, crème au citron vert et crevettes flambées au Pastis

Préparation
Zester le citron vert (utiliser une râpe très fine si possible) puis le presser.Battre le fromage frais et y ajouter le jus de citron vert ainsi que les zestes, saler et poivrer . Filmer au contact puis réserver au frais.Décortiquer les crevettes.
Faire fondre une noix de beurre et 1 cuillère d’huile d’olive dans une poêle.Une fois que le beurre commence à mousser, faire revenir les crevettes jusqu’à ce qu’elles soient bien dorées.Sortir la poêle du feu, y verser le Pastis puis flamber.
Sortir la préparation au citron vert, et garnir une poche a douille.Directement sur le plat de service, disposer 6 oboles au cumin. A l’aide de la poche, déposer une noisette de crème sur chacune des oboles puis recouvrir d’une seconde obole. Cela permettra de coller les oboles ensemble.Garnir les oboles de la préparation au citron vert, disposer 2 crevettes sur chacun de vos canapés. Terminer en les parsemant de coriandre finement ciselée.
