Tuna Tataki with Two Sesames
Asia comes to your table with this tuna tataki recipe with both black and white sesame seeds, for those who can never decide which one is the best. This recipe highlights the unique taste of seared tuna.
For 4 people
Preparation time : 15 min
Ingredients :
- 400g red tuna steak
- 50g Albert Ménès sesame seeds
- 50g Albert Ménès black sesame seeds
- 10 cl soy sauce
- 3 spring onions
- Albert Ménès ginger
- 5 cl sesame oil
- 5 cl olive oil
- 1 lime
- salt flower
Preparation :
- First, press the lemon by rolling it under the palm of your hand on a countertop. Cut it in half then squeeze the juice into a small bowl and set aside.
2. Next, thinly slice the green onions.
3. Sear the tuna in a hot pan, allowing only 30 seconds on each side: the idea is to keep the center of the meat raw.
4. Remove from heat then pour the lemon juice over the tuna, followed by soy sauce, and finally the oils to deglaze the fish.
5. Sprinkle the fish with the onions, ginger, and both black and white sesame seeds.
6. Cut the tuna into pieces and serve it on a flat plate, accompanied by either salty or sweet soy sauce, according to your preference. Garnish with a little fleur de sel (optional).
