CHEESECAKE A LA CREME DE MARRON
Pour la pâte à biscuits :
180g de biscuits Petit Beurre,
75g de beurre
Pour la crème du cheescake :
200g de fromage frais
200g de crème fraîche épaisse de préférence
200g de crème de marron vanillée Albert Ménès
3 œufs
60g de sucre en poudre
40g de marrons entiers pour la décoration
5g de fécule de maïs
Commencez par réduire en miettes les biscuits.
Mélangez les au beurre fondu jusqu'à obtenir une pâte sablée.
Tapissez le fond d'un moule de cette préparation en tassant bien afin que le biscuit tienne.
Enfournez 5 à 7min à 180° puis laissez refroidir.
Pour la crème, mélangez le fromage frais et la crème fraîche avec le sucre.
Ajoutez les œufs, 150g de crème de marrons et la fécule de maïs.
Versez la préparation sur le biscuit refroidie et enfournez pendant environ 1h à 90°.
Réservez ensuite au frais pour minium 5h.
Avant de servir, passer au dressage de votre cheescake en le nappant du reste de la crème de marrons.
Puis parsemez de quelques brisures de marron glacés.
Petite astuce d'Albert Ménès : si vous souhaitez ajouter une touche supplémentaire de vanille, vous pouvez ajouter une gousse de vanille à votre préparation de fromage.
