Vintage sardines are more meaty and tastier because they are caught during the favorable period, in the North-East Atlantic Ocean. They are sorted by hand and then carefully selected according to their size and their absence of imperfection. Prepared fresh, they are then placed in their box and then covered with extra virgin olive oil.
Like good wine, sardines get better with age because they can be preserved in oil. This is why Albert Ménès recommends candying for 4 months after the date of manufacture before tasting. The longer it is, the better the sardines will be. For optimal candying, it is advisable to turn the can every three months. On the box are the number and the vintage.
These sardines can be enjoyed from the tin, accompanied by a slice of farmhouse bread, a green salad or a potato salad. They can also be used to prepare a sardine cream to garnish canapés, crisps or stuffed potatoes.
