The galichon is the last pancake, the one made with the last ladle of pancake batter. It is never perfect, but everyone fights for it. In Brittany, the galichon is traditionally offered to the youngest person at the table. These small savoury lace pancakes are topped with a fine Roquefort cream.

This delicious treat will be much appreciated as a pre-dinner appetiser or can be used to add crunch to salads, especially chicory and walnut salads.
