Unlike classic vinegars, balsamic vinegar is made according to a more complex production process: it is made with grape juice. The grape must is boiled, reduced, decanted and stored in oak barrels. Balsamic Vinegar from Modena is an aromatic and flavourful products which can be used in many ways. In a vinaigrette, it is a great dressing for starters; it is also frequently used in sweet/savoury dishes such as duck breast (with peaches, with honey) as well as in desserts.
