SWEET - STRENGTH 1 - NEUTRAL Once used as a medicinal plant or even as a replacement for pepper by Romans when it was too expensive, these berries grow on small shrubs in the wild and are now used to make gin. These small berries have a beautiful purple-brown colour, a sour taste and a sweet pine smell. It’s best to slightly crush the juniper berries before use to release all of their flavours.
These berries can be used to flavour sauerkraut, deli meats, pâtés and game. These berries can also be used in marinades, sauces and stuffings. Goes perfectly with wild boar, country terrine, red cabbage, sauerkraut, cocktails, and chocolate.
