Pepper grows along climbing vines in clusters. Black pepper is made by harvesting the green peppercorns before they are ripe. These are then dried in the sun for several days. These green peppercorns start to get a wrinkled appearance and get their final colour, becoming black peppercorns. The peppercorns are then sorted, graded and ground.
Season your beef or duck dishes with a sprinkle of crushed black pepper to enhance the flavours of the dish. It can also be used to make foie gras or pepper sauce.
