Native to Central Asia and known since Ancient Egypt, coriander was recommended for its medicinal properties, notably in Pliny the Elder’s Natural History. Coriander does not cook well, and should be added to hot dishes just before serving. It is ideal for enhancing the taste of a salad dressing.
