This red onion and spice confit, slightly enhanced by apple cider vinegar and softened by a hint of honey, is a pure sweet and sour delight. The sweet, round taste of candied red onion is enhanced by a harmonious blend of spices made up of pepper, cinnamon, nutmeg and cloves. Cooked in our workshop in Provence, it is cooked the old-fashioned way in an open copper cauldron, which allows it to keep the texture and flavors of the candied red onion intact
This delicious condiment goes perfectly with holiday meals, around foie gras for example. It will also be ideal for spicing up everyday dishes based on meat, vegetables, or in a savory pie shell.
INGREDIENTS: red onions (70%), sugar, apple cider vinegar (SULPHITES), honey, sunflower oil, salt, gelling agent: fruit pectin, spices (0.2%): grey pepper, cinnamon, nutmeg, clove.
