Already eaten in Persia and Assyria in the early Christian era, shallots are now an essential ingredient in Vietnamese, Chinese and Indian cuisine. Initially entering France via the city of Bordeaux, which gave them a special place in its regional cuisine, they were then invited to the tables of Nantes and Normandy.
Their warm, pungent and slightly garlicky flavour goes wonderfully well with meat and vegetable stews. It enhances vinaigrettes, stocks and red wine sauces.
