Onion confit is a favourite with the simplest dishes. It can be added to burgers, for example, to give them a touch of sophistication. It can also be used directly on puff pastry, for a thin tart ideal for an aperitif. When it's on, it's the perfect accompaniment to foie gras or a fine red meat.
