Known since ancient times, dill is mentioned in a 5,000 year old medical treatise as a remedy for hiccups. Its finely divided leaves release an aroma reminiscent of parsley and aniseed. Dill is the main flavouring in gravlax, a Swedish speciality made from marinated salmon.
Delicious with fish and scallops, dill can be used in the preparation of terrines, parcels or carpaccios. It is also a great accompaniment for cream cheese, cold soups and poultry.
