Cinnamon comes from a little tree with a persistant foliage and thick, irregular and very aromatic bark. It is indigenous to India and Sri Lanka, but can also be found in Madagascar and Brazil, where it naturally thrives in tropical forests. Madagascan cinnamon has a more subtle taste than cassia cinnamon, slightly sweet. It offers almost rose-like floral notes and hints of citrus. 

Perfect for infusing (milk, cream, panna cotta, etc.) and well-suited for pastry recipes. It is much more refined and sweet in flavour than cassia cinnamon.
