Our vintage anchovies get their fleshy texture and delicious taste as they are caught in the North-East of the Atlantic Ocean at the time of the season when they are at their peak of maturity. Prepared in the "old-fashioned" way with fresh fish, they are worked by hand and carefully placed into their tin individually. They are preserved in a drizzle of extra virgin olive oil to enrich their flavour and ensure that they are preserved extremely well. Much like fine wine, anchovies improve with age. Just keep the tin in a cool place and turn them over about once a month.
