White Kampot pepper is named after the region in which it is grown in southern Cambodia. Cambodia has some of the best land in the world for the cultivation of pepper. This tradition dates back to the 13th century and remains to this day. This superior-quality pepper has a protected designation of origin. Kampot pepper is a rare ingredient. Known as one of the best types of pepper in the world, it is today considered a unique and exceptional item. Pepper grows along climbing vines in clusters. White Pepper is made from ripened peppercorns that are then washed and removed from their skin, known as the pericarp. This is where the spicy substance of the peppercorn is located. Therefore, the flavour of White Pepper normally milder. Among the Kampot pepper family, Kampot white pepper has the most subtle taste. This pepper has a slight spiciness and heat that lingers on the palate for a while. It has spectacular citrus flavours and the same enjoyable freshness as red Kampot pepper.
It is most commonly used with fish due to its colour, but also is a great way of enhancing stocks to give them a fresh boost of flavour. Goes perfectly with cream soups, vegetable stock and soups, white fish, cod, prawns, shellfish (Venus clams, clams, etc.), and oysters.
