This unique creation by Albert Ménès is made up of apple pieces, sliced almonds, rose petals, marigold petals and a tasty blend of spices. The flavours of cinnamon sticks, star anise, cardamom, cloves, juniper berries and ginger go perfectly with the round flavours of apple and caramel.
To make 2 cups, infuse 1 tablespoon of this mixture in 50cl of hot water at 90°C for 10 minutes. You can use a small muslin bag or a ball tea infuser. This comforting infusion can be enjoyed all winter long: for breakfast with a dried fig and almond muesli, after a meal to quench your thirst or with orange marmalade nonnettes for a sweet treat.
