This marmalade has been made in the traditional way and cooked in a cauldron pot which is monitored throughout the cooking process by the jam maker. The three citrus fruits contained in this marmalade are well balanced, with the acidity of the lemon and the fruitiness of the orange mixing perfectly with the bitterness of the grapefruit. Picked in Spain, the peels of these citrus fruits are sliced very finely to release their slightly bitter flavour and then cooked with the fruit pulp.
