Almonds have been known to the Mediterranean peoples since ancient times. Prepared from shelled, unblanched almonds, the powder is light brown in colour, perfect for the preparation of frangipane.
Selected for their fruity, fragrant taste, these ground almonds are perfect for baking. They make a delicious “galette des rois” and are an excellent substitute for flour in chocolate cake recipes. Ground almonds are also used in exotic recipes such as Morrocan pastilla.
